Potassium is a mineral necessary for the normal functioning of cells in the body including nerve and muscle cells. According to the U.S. Department of Agriculture, also referred to as the USDA, an adequate intake of potassium for adults is 4.7 g per day. If you have a high level of potassium in your blood, your physician may suggest a diet lower in potassium to prevent complications.

Vegetables

According to the USDA, vegetables containing 100 mg or less of potassium per serving include one raw broccoli spear, one medium raw tomatillo, one cup of cooked leeks, one cup iceberg lettuce, three cooked cauliflower flowerets, one sun-dried tomato, one piece canned hearts of palm, one raw spinach leaf, one slice of a red tomato, one whole scallion, one cherry tomato, one canned beet, one raw strawberry, one medium raw baby carrot, one slice raw onion, one medium butterhead lettuce leaf, one sliced ring of sweet green pepper, one clove of raw garlic and one raw radish.

Fruits

According to the USDA, fruits containing 100 mg or less of potassium per serving include 1 oz. of raw avocado, 1 cup of raw apples without skin, 10 red or green grapes, one raw apricot, half of a canned peach packed in heavy syrup, one raw lemon without the peel, half of a canned pear, one canned purple plum and one slice of canned pineapple.

Meats, Seafood and Fish

According to the USDA, meat, seafood and fish products that contain 100 mg or less of potassium per serving include one chicken or beef and pork mixture frankfurter, one pork sausage patty, two pork sausage links, two slices of dry or hard salami, 3 oz. of canned shrimp, one fried chicken wing, two slices of ham, 3 oz. of pickled Atlantic herring, one chicken liver and one Vienna sausage.

Pasta and Rice

According to the USDA, pasta products that contain 100 mg or less of potassium per serving include 1 cup of spaghetti noodles, 1 cup cooked macaroni, 1 cup egg noodles and 1 cup chow mein noodles. According to the USDA, rice products that contain 100 mg or less of potassium per serving include 1 cup white or brown long-grain rice and 1 cup cooked couscous.

Bread

According to the USDA, bread products that contain 100 mg or less of potassium per serving include one serving of regular crust cheese pizza, one piece of cornbread made with low-fat milk, one slice of french toast made with low-fat milk, one slice whole wheat bread, ½ cup bread stuffing, one slice pumpernickel bread, four whole wheat crackers and one slice of rye bread.

Dairy and Eggs

According to the USDA, dairy and egg products that contain 100 mg or less of potassium per serving include one large egg, 1 tbsp. fat-free cream cheese, 1 tbsp. reduced-fat sour cream, 1 tbsp. light cream. Cheeses that contain 100 mg or less of potassium per 1-oz. serving include pasteurized American or Swiss cheese, blue cheese, provolone cheese, cheddar cheese, whole milk mozzarella cheese and feta cheese.
