Atkins Dip Ideas

If you are following the Atkins diet and plan to entertain without going off of your diet, low-carb dip ideas are one option to eat well and stay on track. You can even make the dips the night before the party and refrigerate them overnight. Serve low-carb side items with the dips as well as regular side items for your guests who are not on the Atkins diet.

Tuna Dip

Mix 2 cans of tuna with ¼ tsp. liquid smoke, 8 oz. cream cheese, 1 tsp. onion powder, 1 tsp. lemon juice, ¼ tsp. salt and 2 tsp. horseradish together. Shape into a ball and refrigerate for at least 1 hour. Serve with low carb crackers, cheese slices or celery.

Crab Dip

Mix ¼ cup mayonnaise, 1 tsp. Old Bay seasoning, 1 tsp. freshly squeezed lemon juice and ¼ cup sour cream in a bowl until smooth. Add 2 finely chopped green onions, 2 tbsp. of diced red bell peppers and one 6 oz. can of drained and picked-over white crab meat. Season with desired amount of salt and pepper and serve immediately with toasted low carb bread or endive leaves.

Spinach and Artichoke Dip

Preheat oven to 350 degrees F. Place one 10 oz. package of thawed frozen chopped spinach, 2 garlic cloves, 8 oz. cream cheese, ¼ tsp. black pepper, one 13 ¾ oz. can artichoke bottoms and 1 cup Parmesan cheese into a food processor or blender. Process the mixture until well blended and spread mixture into a greased 1-quart oven-safe pan. Bake for 30 minutes or until warm and bubbly. Serve immediately with sliced cucumbers, carrots and red peppers.

Shrimp with Avocado Dip

Dice two medium ripe avocados and place them into a blender or food processor. Add 3 tbsp. jalapeno hot sauce and ½ tsp. salt. Process the mixture until well blended. Preheat a stove top grill to medium-high heat. Thread 3 shrimp at least ½ inch apart onto eight skewers. Grill shrimp for approximately 2 ½ minutes on each side or until cooked through and golden and serve immediately with avocado dip.

Tofu and Sesame Dip

Place 8 oz. silken tofu, 1 tbsp. sesame oil, 1 tsp. sugar substitute, 2 tbsp. lemon juice and ½ tsp. salt in a food processor. Turn food processor on low and slowly add ¼ cup canola oil to the mixture. Process the mixture until it is the consistency of mayonnaise. Serve immediately with low carb crackers or vegetable slices.
