Types
Squash, though treated like a vegetable, is actually a fruit from the gourd family, according to The Nibble magazine. Types of yellow squash include the crookneck, straightneck, pattypan and yellow zucchini. Yellow squash has a thin edible skin, mildly sweet flavor and tender texture.
How to Buy
"Real Simple" magazine suggests selecting yellow squash that is less than eight inches long. Choose one that's firm with bright skin. Store yellow squash in a plastic bag in the vegetable drawer of the refrigerator for up to five days. Only wash prior to eating.
