How to Add Vital Wheat Gluten to Pizza Dough

Vital wheat gluten, also known as wheat gluten flour, gives baked goods a light, fluffy texture. Adding vital wheat gluten to pizza dough will result in a lighter dough, and is ideal for pan pizza, says "Techniques of Healthy Cooking." Vital wheat gluten is processed to remove the starch and wheat bran from the product, leaving a product that is high in protein.

Step 1

Pour the amount of flour that you usually use when making pizza dough into a large bowl.

Step 2

Add 1/8 cup vital wheat gluten for every 2 cups flour into the bowl.

Step 3

Mix the vital wheat gluten and flour together thoroughly.

Step 4

Add the yeast, water and any other ingredients you typically use to make pizza dough into the bowl. Follow the remainder of your pizza dough recipe.
