It can be difficult to eat healthy and also stick to a budget. Eating a frozen pizza or going out for fast food can be tempting, but there are a number of healthy meals you can make with only a little preparation and expense.
Sloppy Joes
For a healthy meal that will feed four people for less than $10, try sloppy joes with milk and fruit, suggests "USA Today." Brown 3/4 lb. of ground turkey or lean ground beef and drain the liquid. Add one can of sloppy joe seasoning and one can of black beans. The black beans add extra protein and are inexpensive. Serve on whole wheat buns.
Grapefruit Chicken Satay Salad
For a cheap and healthy lunch serve a grapefruit chicken satay salad, says the Food Network. Peel two large ruby-red grapefruits. Remove the grapefruit sections and set aside. Squeeze the grapefruit membrane to extract the remaining grapefruit juice and set aside. Mix 1 tsp. each of coriander, dry mustard, ground cinnamon, garlic powder, ground pepper and ginger with 1/2 tsp. salt. Cut 1 lb. of skinless, boneless chicken breasts into 1/4-inch thick strips and mix with the spice mixture. Broil the chicken for 5 minutes. While the chicken is in the broiler, whisk 1/4 cup of peanut butter, 2 tbsp. of soy sauce, 1 tsp. of sugar and 1/2 tsp. of hot sauce with the grapefruit juice. Add the cooked chicken, 8 cups of chopped romaine lettuce and 1 cup of sliced radishes. Toss all the ingredients until the salad is coated.
Maple Salmon
Maple salmon is an inexpensive and healthy meal, says AllRecipes.com. Mix 1/4 cup of maple syrup, one minced clove of garlic, 2 tbsp. of soy sauce, 1/4 tsp. of garlic salt and 1/8 tsp. of ground pepper. Use this mixture to coat 1 lb. of salmon. Marinate the salmon and seasoning in a refrigerator for 30 minutes. Bake uncovered at 400 degrees F for 20 minutes.
