Corn is a highly versatile vegetable which is available year round at your local grocer. The vitamins and nutrients present in corn help to make it a part of a healthy diet. Corn is believed to have originated in either Mexico or Central America and has been a staple food item since primitive times. There are many different varieties of corn with one of the most popular being white and yellow kerneled corn. Corn can be enjoyed on the cob, grilled, baked in casseroles and added to soups or stews.

B Vitamins

Thiamin, also known as vitamin B-1, is present in corn. Thiamin aids in the support of enzyme reactions in the body's energy production and is also linked to cognitive and neurological health. Corn also contains pantothenic acid, which supports the body's metabolic system and helps sustain the adrenal glands as well as folate, which aids in red blood cell production and DNA synthesis.

Vitamin C

Corn provides the body with vitamin C. Vitamin C is a water soluble vitamin that needs to be ingested on a daily basis since any excess is excreted through your urine each day. Vitamin C is an antioxidant vitamin that can help to protect the body from free-radicals and environmental pollutants and strengthen the immune system.

Phosphorus

Corn is a rich source of phosphorus. According to the University of Maryland Medical Center, phosphorus works with calcium to build strong bones and teeth, helps the kidneys to filter wastes and decreases muscle pain after a workout. It is needed for the growth, maintenance and repair of all tissues and cells, and for the production of the genetic building blocks, DNA and RNA.
