Also known as pepitas, pumpkin seeds are flat, dark and green, as well as nutty tasting. They belong to the gourd or Cucurbitaceae family.

Vitamins

Pumpkin seeds have a high content of iron, protein and fiber. They also contain most of the B vitamins, folate, and vitamins A and C.

They also pack a high degree of minerals such as calcium, magnesium and potassium. They are relatively high in sodium, so be sure to eat in moderation.

Benefits

The most beneficial way of eating pumpkin seeds is in its raw state, as you will obtain the most nutrients available. However, a very popular way of cooking pumpkin seeds is to roast them in the oven or over a stove. They can then be used as a condiment tossed over salads or soups. You can also grind them up with soups to enhance the flavor and nutritional value.
