Immigrant Samuel Bath Thomas brought his recipe for English muffins over to the United States in 1874. Cooked on a griddle, the recipe produced a product with a crunchy crust and tender inside. More than a hundred years later, Thomas introduced light multi-grain muffins to satisfy demand for a low-calorie, high-fiber product.
Calories and Fat
A Thomas' light multi-grain English muffin has 100 calories and 1 g fat. This is 20 calories less than the regular English muffin. These numbers suggest that this food won't derail your efforts to maintain a healthy weight. You can enjoy it with breakfast, dress it up as a sandwich, or eat it at the end of the day with a cup of tea.
Fiber
According to the Harvard School of Public Health, a diet high in fiber helps prevent diabetes, colon cancer and many other conditions. Accordingly, it recommends that people consume 14 g of fiber for every 1,000 they eat. A Thomas' light multi-grain muffin has 8 g fiber. This is 7 g more than the regular Thomas' English muffin provides. The high fiber-to-calories ratio of light muffins means that when you incorporate them into your diet, you can enjoy low fiber foods, such as yogurt and cheese, knowing that you are meeting your fiber needs.
Protein
One Thomas' light multi-grain muffin supplies 5 g protein. It's almost impossible to underestimate the importance of protein. Muscles, hair, cell membranes, antibodies, enzymes and some hormones are made from protein. The USDA recommends that adults consume 0.8 g of protein for every kg body weight. This means that a 130 lb. woman needs approximately 47 g of protein every day. One English muffin supplies a little more than 10 percent of this requirement.
Vitamins and Minerals
With no vitamin A and no vitamin C, Thomas' light English muffins may not seem to be a great source of vitamins. However, they supply a number of B vitamins including 6 percent of recommended daily allowance of riboflavin, 6 percent of niacin, 8 percent of folic acid and 10 percent of thiamin. These vitamins are critical for a healthy nervous system, healthy skin and muscle tone. Moreover, one muffin also supplies 6 percent of the RDA for iron and 8 percent for calcium. Iron prevents anemia and calcium can help prevent the loss of bone density that leads to osteoporosis.
