Low Carb Snacks to Make at Home

A diet low in carbohydrates limits your intake of foods such as bread, crackers, pasta, grains and even some fruits. Most low-carbohydrate diets contain between 50 g and 150 g of carbohydrates and are used for weight loss such as the well known Atkins and South Beach diets. By limiting carbohydrates, you theoretically cause the body to burn fat for energy. On a low-carb diet, many traditional snacks are off limits. Create your own snacks at home with meat, vegetables and dipping sauces.

Dips

Cut up vegetables such as celery sticks, red pepper strips and endive leaves. For a protein-rich dip, puree water-packed tuna with lemon juice, low-fat mayonnaise and capers. Make a creamy dip by stirring together 1/2 cup sour cream, 1/2 cup mayonnaise, 1 tbsp. lemon juice, a package drained frozen spinach, 1/2 cup grated Parmesan cheese and 1/4 cup chopped water chestnuts and heat in the microwave.

Deviled Eggs

Make deviled eggs. Hard boil a dozen eggs, peel and slice them in half lengthwise. Scoop out the egg yolks and mix them with 1/4 cup mayonnaise, 2 tsp. Dijon mustard, 2 tbsp. minced onion, a dash of salt and 1 tsp. paprika. Use a pastry bag or a spoon to refill the egg white halves with the yolk mixture and sprinkle bacon bits over the top.

Roll-Ups

You can use any number of luncheon meats, dressings, and vegetables, such as peppers, cucumbers, leafy greens, and cheese to create mini rolls. Top slices of roast beef with a bit of Russian dressing and a mini gherkin pickle. Roll the slices into a tube and secure them with toothpicks. Cut the rolls into bite-size pieces. You can also roll deli turkey and cream cheese in romaine lettuce leaves or stacked slices of ham and Swiss cheese. Brush kale leaves with balsamic dressing and top with shredded cucumber and chicken breast for another roll.

Peanut Butter Balls

Make a sweet, low-carb treat by blending together 2 tbsp. peanut butter with 1 scoop vanilla-flavored whey protein powder. Form them into balls and roll the balls in chopped peanuts. Freeze to stabilize the ingredients before eating.
