Low carb dieting can become mundane very quickly. The allure of a low carb diet may easily expire after several nights of eating burgers with no bread and grilled chicken salads. To be successful on your diet, you must be willing to experiment with other foods that you may not typically make. Adding new foods to your diet can reignite your determination to lose weight and help keep you interested in your food.
Meat Rollups
Deli meats and cheeses are typically low in carbohydrates. Many of these foods are also low in fats and high in protein. Choose meats that are not cured with honey or molasses. A smoked turkey and Swiss cheese rollup provides only 1 g of carbohydrates. To make this snack last longer, cut the cheese into three strips and use the same number of turkey slices for a filling snack.
Stuffed Vegetables
Although most vegetables do provide some carbohydrates, these are the types of carbs you should aim to consume. Mushrooms and peppers are two vegetables that you can stuff with various meats and cheeses. Stuff four small portobello mushrooms with Italian sausage, Parmesan and Asiago cheeses, and diced onions for only 6 g of carbohydrates per serving.
Nuts
Nuts are a low carb favorite because they have the "mouth feel" of carbohydrate- rich foods, but typically do not provide as many carbs. However, not all nuts fall into this category. While nuts such as peanuts, pecans, almonds and pistachios carry less than 5 g of carbohydrates per serving, other nuts provide far more, such as chestnuts, which contain 24 g or more per serving. Further, some packaged nuts are covered in sugar or honey, which increase the carbohydrate count. Choose plain or salted varieties of low carbohydrate nuts for a satisfying snack.
Shrimp Cocktail
Shrimp cocktail is high in protein, low in fat and contains about 8 g of carbohydrate per serving when prepared with 1 tbsp. of cocktail sauce. The carbohydrates in this snack come primarily from the sauce, so using a low carbohydrate version of cocktail sauce will dramatically lower the carb content of this snack.
