Banana Walnut Cookies
Bananas and walnuts are a flavorful combination of tastes that can be combined to create nutritious breakfast cookies. Walnuts provide healthy unsaturated fat, as well as fiber and protein, two components of a healthy breakfast. Combine 1 egg, 6 tbsp. of walnut oil, 6 tbsp. of brown sugar, or sugar substitute, and 1/2 tsp. of pure vanilla. Add 2 ripe and mashed bananas and mix well. In a separate bowl, combine 1 cup whole wheat flour, 1/4-cup ground flaxseed, 1/2 tsp. salt, 1/2 tsp. baking soda, 1/4-cup walnut pieces and 1 tsp of cinnamon. Add to wet ingredients and mix well. Place by tablespoon on a greased cookie sheet, flatten with a fork or bottom of a glass and bake at 350 degrees Fahrenheit for 12 to 14 minutes. This recipe makes about 18 cookies.
Banana Dark Chocolate Cookies
You may not consider dark chocolate to be a healthy ingredient for your breakfast cookies, but a small amount will add flavor to your meal, as well as important antioxidants. In a standing mixer or food processor, combine 3 cups rolled oats, 1 tsp. baking soda, 1/2 tsp. salt, 2 tbsp. honey, 2 tbsp. canola oil, 1/2-cup skim milk, 1/2-cup flour and 2 tsp. cinnamon. Mix well. Add 2 very ripe bananas and 1/3-cup of dark chocolate chips. Stir until moistened. Place small tablespoons on a greased baking sheet and bake at 300 degrees Fahrenheit for 15 minutes, or until beginning to darken around the edges. This recipe makes 2 dozen cookies.
Microwave Banana Blueberry Cookie
Bananas and blueberries combine well for a nutritious and filling breakfast cookie. Combine 1 ripe banana with 1 egg white. Add 1 tbsp. skim milk. In another bowl, combine 1/3-cup quick cooking oats, 1 tsp. cinnamon, 1/4 tsp. baking powder and 2 tbsp. ground flaxseed. Add to wet ingredients and microwave for 1 or 2 minutes, or until firm in texture. Pour a 1/2-cup fresh or frozen blueberries on top. Drizzle with honey or sprinkle with cinnamon and serve warm.
Banana Peanut Butter Cookies
Peanut butter is a high energy food that will give you energy at breakfast and keep you energized for the morning. In a bowl, combine 2 ripe bananas with 1/2-cup creamy peanut butter. Add 1/2-cup honey and stir to combine. In a separate bowl, mix together 1 cup of rolled oats, 1/2-cup whole wheat flour, 1/4-cup ground flaxseed, 2 tsp cinnamon and a 1/4-tsp of baking soda. Add the dry ingredients to the wet ingredients and stir just until moistened. Add 1 cup of dried fruit or nuts, such as peanuts, almonds, raisins or cranberries. Place mixture on greased cookie sheets using a tablespoon and flatten with a spoon. Bake at 350 degrees Fahrenheit for 12 to 14 minutes, or until golden. This recipe makes 1 dozen cookies.
