Finding dessert recipes that are egg-free and gluten-free can be a challenge because most baked goods contain eggs and gluten in the wheat flour. Gluten is a protein found in wheat, barley, rye and contaminated oats. People with celiac disease or who have a gluten intolerance need to avoid all sources of gluten. People with allergies to eggs must also avoid eating them in their diet.
Chocolate-Dipped Strawberries
Strawberries and chocolate do not contain any gluten nor eggs. Choose a good quality dark chocolate that does not contain unnecessary ingredients that could contain or be contaminated with gluten. If you are unsure about a specific product, call the manufacturer to confirm that its product is free of gluten. Prepare this dessert by melting squares of dark chocolate, either in a double-boiler or in the microwave. Dip your strawberries in the melted chocolate and put them aside on parchment paper until the chocolate solidifies.
Mediterranean Yogurt Parfait
Any kind of berries, such as raspberries, strawberries, blackberries and blueberries, can be used for preparing this dessert. Put 1/4 cup of berries at the bottom of a glass. Add 2 tbsp. of thick Mediterranean-style yogurt and continue to add layer of fruit over layer of yogurt. You can even add nuts or chunks of dark chocolate to this egg-free and gluten-free dessert if you like.
Oatmeal Cookies
It can be tricky to find egg-free and gluten-free cookies. However, you can make some yourself by mixing a 1/2 cup of melted coconut oil with 1/4 cup unsweetened cocoa powder, 1/4 cup brown sugar, 1/4 cup almond or peanut butter, 1/2 cup unsweetened shredded coconut and 1 1/2 cup of gluten-free oat flakes in a bowl. Use oats that are certified to be gluten-free. If you cannot find gluten-free oats, you can use the same amount of sliced almonds. Use your hands to shape cookies into the size you want. Put the cookies on a baking sheet lined with parchment paper and freeze and freeze for 30 minutes.
Chocolate Fondue
A chocolate fondue is a great finale for a meal. In a double-boiler or in the microwave, melt gluten-free dark chocolate with a little bit of heavy cream. Put the melted chocolate in the middle of the table and dip fruits in the chocolate. You can dip slices of banana, cherries, strawberries, diced apples, orange wedges and pears.
