Multigrain cereal combines several different grains into one food. Common grains in breakfast cereal include corn, rice, oats and flax. You can add multigrain cereal to muffin recipes to increase the fiber content. Many cereals are also fortified with iron, vitamin D and other important nutrients, which will increase the nutrition of your muffins.
Multigrain Cereal and Raisin Muffins
Raisins add sweetness to the muffins and pair well with cereal. Combine low-sugar multigrain cereal in a bowl with 1 cup warmed skim milk. Let stand for 5 minutes, or until the cereal has softened. In a large bowl, combine 1 cup whole-wheat flour with 2 tsp. baking powder, 1/4 tsp. salt, 1 1/2 tsp. cinnamon and 1/2 cup raisins. In a third bowl, beat one large egg with 1/2 cup brown sugar and 1/2 cup unsweetened applesauce. Add the wet ingredients and cereal to flour mixture and combine. Divide the batter among 12 greased muffin cups and sprinkle with additional crushed cereal. Bake at 400 degrees Fahrenheit for 20 to 25 minutes.
Multigrain Blueberry Muffins
Dried blueberries add a sweet taste to the muffins, as well as some fiber and potassium. Stir together 3/4 cup flour, 3/4 cup whole-wheat flour, 1 tsp. baking soda and 1/2 tsp. salt. Add 1/2 cup oats, 1 1/2 cups multigrain cereal and 1/2 cup dried blueberries. Cream together 1/2 cup no-sugar-added applesauce, 1 cup skim milk, 1 tsp. fresh lemon juice, 1/2 cup plus 2 tbsp. sugar and two large eggs. Add the liquids to first bowl, stir until moist and pour into 12 greased muffin cups. Bake at 350 degrees Fahrenheit for 17 to 20 minutes.
Multigrain Mixed Nut Muffins
Using nuts in your recipe will add vitamin E, magnesium, fiber and protein to your muffins. Beat one egg in a large bowl and then add 1/4 cup applesauce, 1/2 cup skim milk and 1/4 cup honey. Place 1 cup whole-wheat flour, 1/4 cup packed brown sugar, 3 tsp. baking powder, a pinch of salt, 1 1/2 cups multigrain cereal and 1/2 cup chopped mixed nuts, such as almonds, walnuts and pecans, in a second bowl and mix well. Pour the applesauce mixture into the cereal mixture and stir to combine. Fill 12 greased muffin cups 2/3 of the way full. Bake for 20 to 24 minutes at 350 degrees Fahrenheit.
Multigrain Cereal and Peanut Butter Muffins
Peanut butter is filled with protein for energy and adds flavor to your muffins. Place 2 cups multigrain cereal in a small bowl with 1 1/4 cups milk. Let stand for 10 minutes. Then add 1 1/4 cup whole-wheat flour, 1/3 cup sugar, 1 tbsp. baking powder, 1/2 tsp. salt, 1/2 cup creamy peanut butter and one egg. Mix until wet ingredients are moistened. Spoon muffin batter into 12 greased muffin cups. Bake at 400 degrees Fahrenheit for 24 to 29 minutes.
