The 21-Day Vegetable Juice Diet is intended to cleanse the body of toxins while promoting weight loss. This liquid diet is also said to heighten metabolism and energy levels. Naturally rich in vitamins, minerals and antioxidants, vegetable juice is considered a healthy diet option and an easy way to ensure that the daily recommended intake (about 3 cups) for vegetables is met.
Juice Preference
Fresh vegetable juice is preferable for the 21-Day Vegetable Juice Diet as fresh juice contains the highest vitamin and mineral content. Canned or bottled products can be substituted, however, though it is important to check labels to make sure that salt and sugar have not been added. If you do opt to stick with fresh veggie juice, you will want to invest in, or borrow, a fruit and vegetable juicer.
Pros and Cons
Vegetable juice is low in calories, fat-free, and packed with vitamins and minerals to promote well-being, making it what many consider to be an ideal diet food. Proponents of the 21-Day Vegetable Juice Diet claim weight losses of up to a pound a day for the duration of the plan.
While a 21-day juice fast will promote weight loss, the American Dietetic Association says that, because of the stringent requirements of such a plan, dieters aren't likely to complete the program (see References below). Also, if you enjoy dining out, prepare to abstain during this diet program as fresh vegetable juice is not likely to be a menu offering.
It is also important to keep in mind that a vegetable juice diet is so low in some essential nutrients, such as protein and healthy fats, that muscle deterioration and weakening of the immune system could occur (see References below).
Selecting Vegetables
Fresh beets, broccoli, carrots, cabbage, tomatoes, spinach, onions, peppers, sweet potatoes, celery and cucumbers are among the most popular juicing vegetables. The addition of fresh herbs can impart spicy flavoring. A green, leafy vegetable should always be included in the mix as they have especially strong detoxifying elements. Organic vegetables are recommended in order to avoid introducing pesticides and other toxins into the body.
Juicing
Juicing vegetables should be used within a day of picking or purchase for optimum nutritional benefit. Vegetables are highly perishable, though freshly made juice can be refrigerated in an airtight container for up to 24-hours without significant nutrient loss. Of course, it is best to drink your vegetable juice immediately, but when that's not possible, fill an opaque container to the top to protect it from damaging light and air, seal with a lid, and keep refrigerated for later consumption that day.
Precautions
Women who are pregnant or nursing should not attempt a vegetable juice fast. Children, people with chronic medical conditions such as diabetes, liver and kidney disease, low weight, anemia, low blood pressure and epilepsy, should also avoid this kind of diet plan. Such a diet can also interfere with some medications. Before beginning this or any diet plan, consult your doctor to make sure it is a safe program for you.
