Deep-green, leafy vegetables are rich in beta-carotene, vitamins, minerals, protein and fibers. Including leafy greens into your diet will help to boost your metabolic functions, keep you full for a longer time and supply your body with vital nutrients. Broccoli, spinach and romaine lettuce are all examples of protein-rich leafy veggies.

Broccoli

Broccoli is a protein-rich vegetable, containing 4 g protein per 1 cup cooked. Broccoli can be added to salads or prepared as a high-protein side dish. Sauté broccoli in garlic and olive oil to add taste and healthy fats to your veggies or steam them for a simple and quick snack.

Spinach

Spinach is another high-protein leafy vegetable. It contains 5 g protein in every 1 cup serving. Add spinach to a mixed green salad or egg-white omelet for a healthy addition to your meal which features iron, vitamin C and beta carotene. Also, spinach is relatively inexpensive, which will help you to create low-calorie dishes without excess spending.

Romaine

Romaine lettuce is 17 percent protein with 7.7 g per head. Romaine lettuce is considered a complete protein which means that it has all eight essential amino acids. Also, romaine is nutrient dense since it contains more vitamin C then an orange, almost as much calcium as a glass of milk and up to 20 oz. water in one head.

Kale

A 100-calorie serving of calorie contains 11 g protein. Kale is slightly bitter with a cabbage-like flavor and is nutrient rich with high amounts of vitamins A, C and K. Kale makes a tasty addition to soups, stir-fries, and sauces.
