South Beach Diet & Cauliflower

The South Beach Diet is one version of a low carbohydrate weight loss plan. The diet requires participants to work their way through three phases, with the first designed to give a quick boost in weight loss. Each of the first two phases has allowed foods and foods to avoid. Phase 3 allows you to eat any food in moderation. Knowing the role of certain foods, such as cauliflower, in the South Beach Diet will help you follow the diet guidelines.

Cauliflower

You can eat cauliflower in all phases of the South Beach diet. This vegetable provides many valuable nutrients, a valuable trait when eliminating a number of foods from your diet during the first two weeks of the South Beach Diet. Cauliflower contains nutrients such as calcium, potassium, vitamin C and many B vitamins.

Uses

During the first phase of the South Beach Diet, eat at least 2 cups of allowed vegetables with lunch and dinner, and cauliflower is a versatile vegetable to include in many meals. You can chop raw cauliflower to eat alone, or you can add this to a salad for lunch. As part of a healthful dinner, you can steam cauliflower and sprinkle it with pepper. Since the South Beach Diet has you eliminate white potatoes from your diet throughout your weight loss journey, mashed cauliflower, when mixed with chicken broth, garlic and other seasonings, may make an interesting and flavorful substitution for mashed potatoes.

Other Foods

During the first and second phases, you can eat a number of vegetables such as broccoli, cabbage, celery, green beans, spinach and snow peas. Select lean cuts of meat or boneless, skinless chicken breast. You can also choose seafood, fish, pork, turkey and other lean proteins. Tofu, legumes, eggs and low-fat dairy make good additions to your meal planning. In the first phase of the South Beach Diet avoid all fruits as well as vegetables such as sweet potatoes and carrots. Once you pass the two week period of the first phase, you can incorporate most of these food items back into your diet.

Considerations

Talk with your doctor prior to making significant changes to your eating habits. Since the South Beach Diet recommends eliminating carbohydrates for two weeks, this could have adverse effects and your doctor can help you identify these potential problems. Avoid solely consume cauliflower while following the South Beach Diet or any other plan. Eat a variety of foods to ensure that you have a healthy intake of required nutrients.
