Goiter is a condition characterized by severe swelling of the thyroid gland, which is located near your esophagus. It causes a large, swollen protrusion under your chin. This condition typically occurs when your thyroid gland cannot produce enough hormones to effectively regulate metabolism. It is typically caused by iodine deficiency. Certain food choices may affect this condition. Talk to your doctor before altering your diet to address goiter.
Kelp
Kelp is a type of seaweed that grows in waters along the coasts of Japan, Europe and North America. Although commonly used in Japanese dishes, it rarely appears in American or European cuisine. Kelp is a rich source of iodine, a mineral that plays an important role in the production of thyroid hormones, according to Michael Castleman, author of "The New Healing Herbs." Adding kelp to your diet may help reduce thyroid swelling associated with goiter.
Table Salt
Table salt in the United States and Europe is typically treated with iodine to help prevent goiter and improper thyroid function. Using iodized table salt may help control thyroid swelling, according to the University of Maryland Medical Center. However, table salt is also high in sodium. Although this mineral is necessary for fluid balance in your body, high consumption of sodium may contribute to high blood pressure, which can lead to heart disease.
Other Iodine Sources
Other foods that are rich in iodine include fish such as tuna, mackerel, salmon and herring. Plant-based foods such as spinach, Swiss chard, garlic, asparagus, mushrooms, lima beans, zucchini and sesame seeds are also abundant sources of iodine. This mineral is available in supplement form as well.
Considerations
Check with your physician before using foods or supplements to increase your iodine intake; although iodine poisoning is uncommon, consumption of more than 150 micrograms of iodine per day may be toxic to your body and may suppress thyroid function. Also, vegetables such as kale, broccoli and cabbage contain chemicals that may interfere with thyroid function and worsen goiter, according to Balch, the author of Prescription for Nutritional Healing. Limit or eliminate these foods if you have goiter.
