Oatmeal cookies get some chewy zing from the addition of raisins, but not everyone enjoys the flavor of raisins. If you have an oatmeal-raisin cookie recipe, all you need to do is leave out the raisins. You can replace them with another ingredient, or enjoy a simple version of an oatmeal cookie. If you don't already have a favorite, use this tasty recipe to make oatmeal cookies that you and your family will enjoy.
Step 1
Bring all ingredients to room temperature. When ingredients are all the same temperature, they combine easier, resulting in a cookie that is free of lumps. Butter that has reached room temperature is easier to cream.
Step 2
Preheat the oven to 375 degrees.
Step 3
Place the butter in a large mixing bowl and beat with a mixer on high speed until it appears light and fluffy. Slowly add the brown sugar and vanilla until they are incorporated with the butter.
Step 4
Sift the flours, baking soda and spices together into the medium bowl. Add the oatmeal, and stir well.
Step 5
Add the oatmeal mixture, 1/2 cup at a time, to the butter mixture. Make sure that all ingredients are mixed together well, but do not mix too much, as this will develop the gluten in the flour, resulting in a tougher cookie.
Step 6
Line your cookie sheet with parchment paper to make the cookies easier to remove. Use a tablespoon to scoop up the dough. Roll it gently into balls, and place them on the cookie sheet, leaving 1 in. of space between each ball.
Step 7
Bake for approximately 20 minutes, or until lightly browned.
Step 8
Use a spatula to remove the cookies from the cookie sheet and set them on a rack to cool.
Tips and Warnings
- Make these oatmeal cookies lower in fat by replacing 1 cup of the butter with 1 cup of applesauce. The result will be a cookie that has a cake-like texture, but that is significantly lower in calories and fat. Consider adding dried cranberries or blueberries to your oatmeal cookies. Nuts are also a healthy and tasty addition.
- As with any dessert, eat oatmeal cookies in moderation. Even when made with reduced fat, oatmeal cookies are high in refined carbohydrates, such as sugar and white flour. Over time, these ingredients can lead to weight gain.
