How to Make Pumpkin Pie With Flax Seed

Adding flax seeds to recipes is a simple way to include more heart-healthy omega-3 fatty acids in your diet. In many cases, the seeds can be added to your homemade baked goods in their whole form. In addition, ground flax seeds can act as a binder in recipes, eliminating the need for eggs. Pumpkin pie typically relies on eggs for its smooth, rich texture, but replacing the eggs in your favorite pumpkin pie recipe, such as the classic Libby's recipe, with ground flax seeds can mean less guilt about indulging and more reasons to be thankful once you try your first bite.

Step 1

Mix the sugar, cinnamon, salt, ginger and cloves in a small bowl. Set aside.

Step 2

Mix the ground flax seeds with the water in a large bowl. Set aside for two or three minutes to allow the mixture to thicken.

Step 3

Add the canned pumpkin and sugar-spice mixture to the ground flax seed mixture and combine. Gradually stir in the evaporated milk.

Step 4

Pour the mixture into the prepared pie shell.

Step 5

Bake in a preheated 425° oven for 15 minutes. After 15 minutes, reduce the temperature to 350° and continue baking for 40 to 50 minutes, or until a knife inserted near the center comes out clean. Let the pie sit uncovered on a countertop until cool.

Tips and Warnings

  • Pumpkin pie is easily adaptable to a wide range of tastes and needs. If you're vegan or lactose-intolerant, try using soy, rice or nut milk in place of the evaporated milk. Experiment also with different types of sweeteners, like Sucanat, maple syrup or rice syrup, or try a sugar replacement like Splenda. Homemade graham cracker crusts, or another crumb-type crust, like one made with flour or oats and ground nuts or additional flax seed, also lend themselves particularly well to pumpkin pies.
