Getting a crispy coating on the outside of a piece of chicken is usually accomplished by frying. Fried chicken adds a high amount of fat and unnecessary calories to your daily total, and will eventually add inches to your waistline. You can still create a crispy coating by baking chicken in the oven and save yourself the guilt and extra calories of frying.

Step 1

Preheat your oven to 350 degrees Fahrenheit.

Step 2

Line a roasting pan with aluminum foil, and coat the foil with cooking spray.

Step 3

Combine cornflake cereal crumbs with cayenne pepper, salt, Parmesan cheese or any other spices you want to add in a mixing bowl.

Step 4

Beat a few eggs in a small bowl and place that bowl beside the bowl with the coating.

Step 5

Dip the chicken pieces into the egg wash, and then roll in the crumb mixture to coat. Use chicken breast, strips, drumsticks or wings.

Step 6

Place the coated chicken in the roasting pan and slide the sheet into the oven. Bake for 30 to 60 minutes depending on the type of chicken you are using, or until a meat thermometer reads 180 degrees Fahrenheit.

Step 7

Serve the oven-fried chicken with a baked potato, steamed vegetable or salad to keep the low-calorie theme.

Tips and Warnings

  • Use buttermilk instead of egg for a different flavor on the chicken. Start the chicken in a 425-degree oven for 15 minutes and then reduce the heat for a crispier coating.
