Seasoning for a Pizza Board

A pizza stone is designed to distribute heat evenly, drawing moisture from your pizza crust and cooking it to crispy perfection. When you purchase your pizza stone, it is white and porous, like an unfinished ceramic tile. There are many opinions for seasoning your pizza stone, but the best option is to let it season naturally over time. Wiping oil on the pizza stone will seal the porous surface and inhibit its ability to distribute heat. Your pizza stone should have instructions from the manufacturer; read these carefully before you add anything to your pizza stone.

Step 1

Place the pizza stone in the oven while it is off for several days before you plan to use it. Use your oven as normal.

Step 2

Leave the pizza stone in the oven unless it is on a self-cleaning cycle. The self-cleaning cycle is too hot for the pizza stone and it will shatter.

Step 3

Try cooking a pizza on the stone after a week. If the crust is still pale on the bottom and not crispy, it hasn't seasoned completely. The pizza stone still works and the pizza will be fully cooked, but the stone is not working to full capability yet. You will know when the stone is fully seasoned when it turns dark with age and cooks the pizza crust to a crispy golden brown.
