How to Cook Nachos With RO*TEL & Ground Beef

RO*TEL makes quick work of common southwestern dishes. Since the diced-tomato product already contains green chiles and common spices like red pepper and chili powder, the product lends itself well to Mexican and Southwestern dishes, like nachos. While nachos are traditionally thought of as a snack or appetizer, adding beef can turn nachos into a meal that will satisfy a slew of eaters. Just add your favorite toppings, bake in the oven and serve for a quick and cost-effective meal.

Step 1

Brown a pound of ground beef in a skillet on medium-high heat. Break up the beef as you cook. Drain the beef when all of the beef has browned.

Step 2

Add an entire can of Original RO*TEL. This saves time because you can skip seasoning the nachos on your own.

Step 3

Remove the tomatoes and ground beef from the heat. Spread tortilla chips in a singular layer across a baking pan. If desired, open and drain a can of unseasoned black beans.

Step 4

Spread the beef and tomatoes mixture across the top of the tortilla chips and sprinkle with black beans, if desired. Top the entire pan with the shredded cheese of your choice and place in the oven at 350 F until the cheese is melted and bubbly, about 10 minutes.

Step 5

Serve warm with lettuce and sour cream on the side.

Tips and Warnings

  • Note that a can of Original RO*TEL has 169 calories, so it's a fairly low-calorie addition to your nachos. Adding other toppings and the chips and ground beef will certainly increase the calorie count.
