Brussels sprouts have a bad reputation, but the small vegetables pack protein, fiber and several vitamins and minerals. Fresh Brussels sprouts offer a firm texture when prepared correctly, unlike the mushy vision that many people have of the vegetable. Cooking the vegetable in the oven creates a roasted effect that turns the outer leaves crispy with a crunch throughout. The seasonings on the baked Brussels sprouts are adjustable to allow you to customize the vegetable side dish to your taste preferences.

Step 1

Wash the Brussels sprouts with cool water. Remove the outer layer of leaves that look yellow or worn.

Step 2

Cut off the stem tip on each piece. Cut the Brussels sprouts in half to shorten the baking time.

Step 3

Add the sprouts to a bowl and toss them with a few teaspoons of olive oil. You want all of the pieces covered lightly with the oil. Stir in salt, pepper and other desired seasonings. Add few teaspoons of balsamic vinegar for additional flavor.

Step 4

Spread the oiled and seasoned Brussels sprouts into a single layer on a baking sheet with an edge. Roast the vegetables at 400 degrees Fahrenheit for 20 to 30 minutes.

Step 5

Check the sprouts every 10 minutes to monitor progress. Stir them to promote even browning of the outer leaves. Test a sprout by cutting into it with a fork to look for a tender texture without it being mushy. The browned outer layer is also an indication that the vegetable is done roasting.

Step 6

Remove the Brussels sprouts to a serving dish and top them with more balsamic vinegar, grated cheese or other desired toppings.
