How to Cook Broccoli Soup

In addition to delivering a big punch of vitamins C and K, broccoli is a good source of B vitamins, vitamin A, potassium, iron, and special compounds that may help prevent cancer. While you can eat broccoli raw, steamed or cooked in casseroles, broccoli soup is simple to make and is a comforting and tasty way to get a serving of this nutritious vegetable.

Broccoli Soup

Step 1

Prepare the broccoli. If you're using raw broccoli, wash it, remove excess leaves and cut off the florets. Remove the tough outer part of the stem with a vegetable peeler and cut the remaining stalk into small pieces. If you're using frozen broccoli, thaw it, then squeeze it in a towel to remove excess moisture.

Step 2

Steam the broccoli in a pan on the stove or in the microwave until it is tender.

Step 3

Put the cooked broccoli into a blender, put the cover firmly in place, push the puree button and blend until it is smooth.

Step 4

Put the pureed broccoli in a large pot on the stove and add 2 cups of chicken broth, the heavy cream and salt and pepper to taste. If the soup seems too thick, you can add more chicken broth as desired. Warm over medium heat.

Tips and Warnings

  • Try adding onion and garlic to the soup. Saute one onion and a clove of garlic in olive oil until tender, then puree together with the broccoli.
  • Do not boil the soup or heat it over high heat because this may cause the cream to curdle.

  • 1 head of broccoli cut into florets (about 2 cups) or 1 10-oz. package of chopped frozen broccoli
  • Chicken broth -- 2 cups or more to taste
  • ½ cup heavy cream
  • Salt
  • Pepper
  • Blender
