How to Smoke Eggs

Eggs can be smoked in a variety of ways. You can use liquid smoke along with other ingredients such as soy sauce and sugar as a marinade for sweet and savory Chinese-style smoked eggs, or you can smoke them over a hard wood such as hickory or oak. Eggs that are smoked in a smoker are very versatile; you can serve them as is or prepare the eggs in a variety of dishes, from smoked deviled eggs to to smoked egg salad; the choice is yours.

Step 1

Insert the wood chips into your smoker and preheat it to 225 degrees.

Step 2

Place the eggs in your heavy pot and cover them with water. Add the Kosher salt to the water. Turn the burner to high and heat the eggs until the water begins to boil. Then, remove the pot from the burner and cover it. Allow the eggs to continue cooking in hot water in the covered pot for 12 minutes.

Step 3

Remove the eggs and run them under cool water for five minutes or fill your sink with water and ice and soak the eggs for 5 minutes. The cool water or ice will shrink the egg inside, allowing you to peel the eggs more easily. Crack the eggs, but do not peel them and place them back in the carton or in a grill pan.

Step 4

Place the eggs in the top oven of the smoker for one hour.

Step 5

Remove the eggs from the smoker and allow them to cool for 10 minutes or until you can handle them easily. Peel the eggs.

Step 6

Cut the eggs in half. Then, sprinkle the eggs with olive oil and seasonings such as chives and scallions or make them into an egg salad or deviled eggs.

  • 1 tbsp. Kosher salt
  • 1/4 c. olive oil (optional)
  • Scallions to taste (optional)
  • Chives (optional)
