How do I Make Mexican Chicken & Rice?

Mexican food has a rich and diverse history, with influences from Spanish, Portuguese, Aztec and Mayan cuisine. Staple ingredients in many common Mexican dishes include rice, beans, corn tortillas, various meats and a wide array of flavorful spices and peppers. Popular foods include tacos, ceviche, enchiladas, tamales, flan and moles. Mexican chicken and rice, one of the more popular dishes, is relatively quick and easy to make.

Step 1

Trim all of the fat from the chicken breast. Cut chicken breast into 1/2-inch strips.

Step 2

Chop the garlic and onions separately. Saute onions in a large saucepan for 3 to 4 minutes.

Step 3

Add chicken to the large skillet and top with salsa, garlic and chicken broth. Place a lid on the skillet and boil until meat is thoroughly cooked on medium to high heat. Reduce the heat and let the chicken simmer for approximately 10 minutes.

Step 4

Add the sweet basil, oregano and stir in white rice. Let all the ingredients simmer for about 5 minutes.

Step 5

Sprinkle cheese on top of the rice and chicken and let it simmer for one to two more minutes.

Tips and Warnings

  • Serve with an iced horchata to complement the dish.
  • Because this dish is quick and easy to prepare, be sure not to leave it on the stove for too long, as the rice and chicken will become overcooked or burn.

  • 1 cup instant white rice
  • 1 can chicken broth
  • 1 cup salsa
  • 1 cup Mexican cheese
  • 4 tbsp. olive oil
  • 2 chopped garlic cloves
  • 1/2 cup chopped onions
  • 1 tsp. oregano
  • 1 tsp. sweet basil
