How do I Roast a Whole Turkey in a Rotisserie?

Everyone who likes turkey has a favorite way to prepare it. Rotisserie cooking is a common favorite way to roast your turkey because it is requires little prep work and the rotisserie motion prevents the juices from dripping out and drying out the meat. Rotisseries are available in models that fit over your gas or charcoal grill, or electric enclosed models that fit on a counter top. If you are cooking with a closed rotisserie, check the particular instructions for your model before you cook because instructions vary depending on the rotisserie.

Step 1

Remove the giblets and the neck from the thawed turkey. Reserve the giblets for gravy, if you wish.

Step 2

Truss your thawed turkey with kitchen twine; tie the legs together and tuck the wings in the legs. Trussing helps the turkey cook evenly and prevents the wing tips and other bony parts from becoming overcooked.

Step 3

Brush the olive oil evenly on the turkey.

Step 4

Remove the spit assembly from your rotisserie. Preheat the rotisserie to 350 degrees Fahrenheit according to the manufacturer's instructions.

Step 5

Place the turkey on the spit and secure with the clamps. Many assemblies are slightly different so follow the instructions from the manufacturer carefully to ensure that your turkey is set up correctly and will not fall off the spit.

Step 6

Place the spit assembly in the rotisserie and close the door. Roast the turkey for 3 to 3 1/2 hours for a 6 to 8 lb. turkey, for 3 1/2 to 4 hours for an 8 to 10 lb. turkey and 4 to 5 hours for a 10 to 12 lb. turkey.

Step 7

Take the turkey out of the rotisserie at the end of the cooking time and take its temperature with your meat thermometer. Your turkey should be near 180 degrees Fahrenheit internally. Test the turkey in several places, being careful not to hit any bone with the thermometer because the temperature at the bone might not reflect the temperature of the meat. When the turkey is at 180 degrees Fahrenheit, remove it from the rotisserie and allow it to rest for 15 minutes before you carve it.
