How to Broil Sea Bass

The varieties of sea bass include Chilean sea bass and Patagonian toothfish. Chilean sea bass, the most expensive, is overfished and the industry poses risks to sea birds. Other varieties of sea bass are also delicious, and may be a better choice if you have concerns about the environment. Visit your fish market for the sea bass you prefer, then take the fish home and broil it quickly for a delicious and easily prepared dinner.

Step 1

Move your oven rack so it sits approximately 6 inches from the broiler. Place the skillet or saute pan on the rack and set your oven to 550 degrees Fahrenheit. Allow it to preheat for 15 to 20 minutes.

Step 2

Rinse and gently pat dry the sea bass fillets.

Step 3

Brush each fillet with olive oil and season with salt and pepper. Add any other seasonings you like at this time, including garlic or onion powder, lemon pepper or a seafood seasoning mix.

Step 4

Remove the preheated skillet from the oven, using the potholders. Turn the oven to broil.

Step 5

Place the fish in the skillet under the broiler. Broil for less than 10 minutes for a 1-inch-thick sea bass fillet. Allow additional time if you're broiling several fillets, checking frequently.

Step 6

Remove the pan carefully, using hot pads to protect your hands. Serve the fish with the pan side up for the most appealing plating.

Tips and Warnings

  • If you have an electric broiler, you may need to place the pan at the back of the oven and prop the door open slightly.
  • Broiling may smoke up your kitchen. Turn on the ventilation fan, if you have one, or crack a window open.
