Pork goes well with a fruit-based sauce, glaze or chutney. Orange marmalade adds a tangy flavor and sweetness to pork tenderloin or pork chops on its own or as part of a more complex sauce. Marmalade is similar to jams and jellies, only it is made exclusively with citrus fruits.

Pork Chops

Step 1

Mix together 1/3 cup of orange marmalade and 1 cup of freshly squeezed orange juice in a small bowl.

Step 2

Place a skillet on the stove on medium heat, and add the unsalted butter and vegetable oil.

Step 3

Add your pork chops to the skillet, and cook for six to eight minutes, turning only one time, until they are just cooked through.

Step 4

Remove the chops from the skillet and place on a plate, covered loosely with aluminum foil.

Step 5

Save 3 tbsp. of drippings from the skillet, and add the marmalade and juice mixture to the skillet. Raise the heat to medium-high, and scrape the brown pieces on the bottom of the pan with a wooden spoon.

Step 6

Cook the sauce for six to eight minutes, or until it has reduced and has a syrupy consistency.

Step 7

Reduce the heat to medium, and add the pork chops back to the skillet. Cook for two or three more minutes, turning the pork chops in the marmalade sauce a handful of times before serving.

Pork Tenderloin

Step 1

Place the soy sauce, honey, orange marmalade, red pepper flakes and rice wine vinegar in a saucepan over medium heat.

Step 2

Simmer for two to three minutes, and remove from the heat. Let the glaze cool to room temperature, and evenly distribute it between two bowls.

Step 3

Marinate the tenderloin in the glaze from one of the bowls for at least one hour in the refrigerator.

Step 4

Preheat your grill to medium, and place your marinated tenderloin on the heat. Grill the pork for eight minutes, then flip it over.

Step 5

Baste your tenderloin with the remaining marmalade glaze, and grill it for an additional six to 10 minutes. Remove from the heat when a meat thermometer inserted in the thickest part reads 160 degrees Fahrenheit.
