Freezing is a method of preserving those sweet, juicy peaches of summer. The process you use to prepare the peaches for freezing affects how they will turn out when you thaw them. Peaches are susceptible to browning if not properly prepared. They can also become mushy. Despite the potential problems in freezing peach slices, the process is relatively easy. Gather ripe yet firm peaches to freeze so that you can enjoy the taste of summer during the fall and winter months.
Step 1
Write the date on the freezer bags before you begin. Label the bag "sliced peaches" so you can quickly determine what is inside the bag.
Step 2
Rinse the outsides of the peaches gently under cold water. Dry the peach skins thoroughly.
Step 3
Place the whole fruits with their skins still intact in the freezer for one to two hours to freeze them slightly. The added firmness makes the peaches easier to handle and allows their skins to come off easily.
Step 4
Cut the peaches in half and pull the two sides apart so that you are able to remove the peach pit.
Step 5
Cut the peaches into the desired slice sizes.
Step 6
Peel or cut away the skin from each slice. If you choose to freeze the peaches whole, the skin should be easy to pull off.
Step 7
Combine 3 tbsp. of an ascorbic acid fruit preservative product with 3 cups sugar.
Step 8
Stir the slices from eight to 10 peaches into the mixture.
Step 9
Scoop the peach slices into the labeled freezer bags, measuring out the slices if you want equal servings in each of the bags. Be sure to leave some space at the top of each bag so that the peaches aren't crammed.
Step 10
Squeeze out the extra air and press together the closure on the freezer bag.
Step 11
Lay the bags of peach slices flat in the freezer for a thinner package of fruit. This makes it easier to thaw the peaches when you're ready to use them.
