Roasting chicken breasts allows you to prepare vegetables right alongside the meat. The advantage is that the vegetables will cook in the juices from the chicken, which will enhance the flavor. Chicken is a meat that works well with a number of vegetables. Make selections based on what you like, then roast all the components together in one step --- and in one dish.

Step 1

Wash and cut the vegetables you want to cook. For example, if using an onion, peel and chop it.

Step 2

Lay out all your vegetables in the bottom of a baking dish.

Step 3

Set the chicken breasts on top of the vegetables. Rub the surface of the meat with olive oil and season as desired.

Step 4

Preheat the oven to 375 degrees Fahrenheit. Cover the dish with aluminum foil and place it on the top rack in the oven. Bake the chicken for 30 minutes, then stir the vegetables. Bake for an additional 20 minutes.

Step 5

Stick a meat thermometer into one of the chicken breasts. Once the temperature reaches 160 degrees Fahrenheit, remove the foil and cook for five to 10 minutes longer to brown the meat.
