Chicken is a versatile meat that can be cooked and flavored in several ways. Crispy deep-fried chicken is a classic favorite. The same crispiness can be achieved by coating chicken breasts in crushed Ritz crackers and baking in the oven. This is a simple recipe to prepare and takes minimal time to cook, making it a great choice for a weeknight meal.
Step 1
Place both unwrapped sleeves of Ritz crackers into a large plastic bag. Seal the bag and use your hands to crush the crackers into crumbs.

Pour 1 cup of flour into the other large plastic bag.

Place a large nonstick skillet on the stovetop on medium-high heat. Cover the bottom of the skillet with a thin layer of canola oil.

Coat each breast in the Rtiz cracker crumbs and place in the heated skillet. Brown both sides of the chicken until golden brown, usually one to two minutes per side.

Spray a glass baking pan with cooking spray. Transfer each chicken breast to the prepared baking dish from the skillet, using tongs.
