Brunch is the time of the day that splits the difference between breakfast and lunch, meaning the foods you serve can include breakfast favorites, like eggs and bacon, or even pancakes, in a hearty, lunch-worthy recipe. Casseroles are ideal for brunch, because you can make them ahead of time so you're not spending the morning slaving over a hot stove. Depending upon your favorites foods, you can make a savory or sweet brunch casserole.
Savory Casserole: Holiday Brunch Casserole
Step 1
Preheat oven to 375 degree Fahrenheit, if you are going to cook your brunch casserole after composing it. You can compose the casserole and cook it the next day, as long as you keep it in the refrigerator until you are ready to cook it.
Step 2
Combine the shredded potatoes, sausage, bacon, green pepper, 1 cup of the shredded cheese and onions in a large bowl.
Step 3
Grease a 13-inch x 9-inch baking dish, and pour your mixture into it.
Step 4
Mix the biscuit mix, salt, eggs and milk in a separate bowl. Pour this mixture over the top of the ingredients already in your baking dish, and then sprinkle the remaining cheese over the dish.
Step 5
Bake at 375 degrees Fahrenheit for 30 to 35 minutes. Do not cover the dish. The casserole is fully cooked when you insert a knife and it can be removed cleanly. Cool for 10 minutes before serving.
Sweet Brunch Casserole: Baked French Toast Casserole
Step 1
Preheat your oven to 350 degrees Fahrenheit, if you are going to cook your brunch casserole after composing it. You can compose the casserole and cook it the next day, as long as you keep it in the refrigerator until you are ready to cook it.
Step 2
Slice the French bread into 20 slices that are about 1-inch thick.
Step 3
Butter a 13-inch x 9-inch baking dish, then place the slices in the dish in an overlapping manner.
Step 4
Mix eggs, half-and-half, milk, sugar, vanilla, cinnamon, nutmeg and salt with either a electric mixer, blender or whisk. The mixture should be blended, but should not have too many bubbles.
Step 5
Pour this mixture over the bread, spreading it as evenly as possible. Cook for 40 minutes until puffy and golden brown. Serve it with warm maple syrup.
