Ancient Greeks considered figs to be more precious than gold. Given the sheer power of their nutritional punch, that makes a lot of sense. A half-cup of figs offers as much calcium as a half-cup of milk. Stuffing a fig may seem like gilding the lily, but cheese-stuffed figs are high in protein and other nutrients. Making stuffed figs is uncomplicated and offers a nutritionally elegant alternative to your basic cheese and cracker snack.
Step 1
Set the figs in a colander and rinse them thoroughly in cool water. Pat them dry with paper towels.
Step 2
Put soft cheese, like chevre or cream cheese, into a bowl and soften it further with a spoon.

Add chopped nuts, herbs and spices, according to your particular tastes. Figs go well with a blend of sweet and savory, so don't be afraid to get creative.
Step 4
Slice the tips off of the figs with a paring knife, then slice down through the top, almost to the bottom. Turn the fig 90 degrees and make a second cut perpendicular to the first. Do not scoop out the seeds; they give the figs their distinctive creamy-crunchy texture.
Step 5
Squeeze the fig open and spoon the cheese, nut and herb filling into the opening. Repeat for the rest of the figs.
Step 6
Drizzle balsamic vinegar, honey or a sweet syrup over the figs before serving.
