The beauty of using your microwave to prepare shrimp scampi comes in time savings and control. From start to finish, you can get a meal on table in less than 10 minutes using ingredients that turn it from rich and butter laden to healthy and nutritious. All you need to accomplish this cooking feat are the right ingredients, a microwave safe dish, a sheet of waxed paper and a few minutes of your time.
Step 1
Add the olive oil, minced garlic and seasonings to a microwave safe dish. While minced onion and red pepper flakes are common seasoning additions, consider adding a sprinkling of black or lemon pepper, Parmesan cheese or Italian flavored bread crumbs according to your taste and preference.
Step 2
Set the dish in your microwave and cover with a sheet of wax paper. Microwave on "High" for one minute, stir and then microwave for one additional minute. Cover your hand with an oven mitt and remove the dish from your microwave.
Step 3
Mix the lemon juice, white wine and parsley in a small cup. If you prefer a non alcoholic ingredient, substitute white grape juice for the wine.
Step 4
Set the shrimp in the dish using tongs, arranging so their tails point toward the center. Then, pour the liquid over the shrimp.
Step 5
Set the dish back into your microwave, replace the wax paper cover and microwave on "High" for two to four minutes. Check the color of the shrimp once during cooking and remove from your microwave when the color just starts to turn pink.
Step 6
Pour the shrimp scampi into a serving bowl, stir and serve.
Tips and Warnings
- If you plan to serve pasta with your shrimp scampi, start it before preparing the shrimp. You may find it takes longer to cook pasta on the stove than it does to microwave your shrimp.
