Fudge is a soft candy made from sugar, cream and butter. The dessert's silky texture comes from how the sugar forms small crystals. While some recipes require that you prepare a sugar syrup to produce crystals of the right size, there are some recipes that eliminate the sugar syrup yet still result in a candy that looks and tastes just like fudge. Using a double boiler or a bowl over a pan of water to cook your fudge makes this recipe simple and almost fool-proof.
Step 1
Grease an 8-by-8-inch square baking dish with butter.

Combine the chocolate chips and butter in the top of a double boiler.

Top with the sweetened condensed milk.

Fill the bottom of the double boiler with at least 1 inch of water and bring it to a boil.

Reduce the burner's heat to keep the water at a simmer.

Place the top of the double boiler on the bottom pan.

Stir the ingredients together as they start to melt.

Pour the mixture into the prepared dish when the ingredients are fully combined.

Allow the fudge to cool completely and then cut it into squares.
Tips and Warnings
- You can use a variety of chocolate chips to create the fudge, including semi-sweet or dark. Alternatively, you can use peanut butter chips instead of chocolate chips to create peanut butter fudge or half chocolate chips and half peanut butter chips for chocolate-peanut butter fudge. If you want peanut butter swirls, you'll need to melt the peanut butter chips separately from the chocolate chips and swirl them in at the end. Do not substitute evaporated milk for the sweetened condensed milk. For added flavor and texture, you can add chopped nuts to the fudge while the ingredients are melting. Make candy on clear days when the humidity is low or the fudge will not set up properly.
