The process of smoking chicken thighs is a slow one. However, smoking them crisps your chicken skin, tenderizes the meat and infuses the meat with flavor. Step 1
Heat the smoker to 250 degrees Fahrenheit.

Rinse the chicken thighs thoroughly under cool water then pat dry with your paper towels.

Season the chicken with any herbs or seasonings of your choice to add taste and flavor to the smoked chicken.

Fill the water pan inside the smoker, half full. Wrap a handful of wood chips in aluminum foil and poke a few holes in the foil and add them to the smoker.

Place the chicken thighs in the smoker and let them sit for 1 1/2 to three hours.

Insert the meat thermometer into the thickest area of the thigh periodically. Once it reaches 180 degrees Fahrenheit, it is fully cooked.
Step 7
Carefully remove the thighs from the smoker and let cool for 10 minutes. Serve immediately.
