You have a bread craving. You want a bread that is delicious and nutritious. The healthiest breads are those that have unprocessed ingredients and contain high fiber content -- both wild rice and whole wheat bread meet these requirements. Comparing both breads in terms of nutritional content, texture and taste will help choose a preference.
Compare the Flour
Both wheat and wild rice bread are made from milled wheat. If the milling includes the outer shell of the kernel, the flour is whole grain. Wheat flour is dense; usually white flour or a leavening agent is added to help it rise. Cooked wild rice, a cereal grain, is added to flour to make wild rice bread. The flour in wild rice bread can be a variety including white, wheat, rye, or multigrain.
Compare the Texture
Wheat bread is a heavy bread, usually with a chewy crust. Wild rice bread has different textures, depending on what kind of flour has been used. The crust may also be chewy or soft, depending on the flour and the recipe used. If a whole grain dough such as rye, wheat or multigrain, is used the dough will be chewy, like a wheat bread. If refined white flour is used, the dough will be soft, like a white bread.
Compare the Taste
Wheat bread tends to taste like barley, with a slightly bitter aftertaste. Wild rice bread has a nutty aftertaste due to the added flavor of the rice. If the wild rice bread is made with white flour and yeast, it will also have a slightly yeasty taste. If rye flour is used, it will have both bitter and nutty flavors. If wheat flour is used, it will taste of barley and nuts.
Compare the Nutrition
Wild rice bread contains rice and wheat while wheat bread just contains wheat. In terms of nutritional value both have comparable protein -- there are 13.8 g protein per 100 g of wild rice whereas whole wheat has 14.3 g per 100 g. Wheat bread has more fat -- 1.8 g per 100 g versus wild rice which has 0.6 g per 100 g. They both have comparative carbohydrates -- between 71.7 g to 75.3 g per 100 g. Wheat bread has much more iron; 60 mg per 100 g whereas wild rice has 17 mg per 100 g.
