Spicy marinated peppers add both color and flavor to all manner of dishes, from salads and sandwiches to pasta. Marinating pepper strips is neither complicated nor time consuming, though it takes a few minutes of prep work. You can steep any kind of peppers in vinegar and hot sauce, but colorful red, yellow and green bell peppers lend themselves especially well to this sort of marinade. Marinated peppers can be canned, cooked using any method except boiling, or served as is.
Step 1
Wash your peppers under cold running water, and use paper towels to dry them.
Step 2
Set your peppers on a cutting board, and remove the stem ends using a sharp knife. Cut the peppers in half lengthwise and remove the seeds, then slice the halves into strips.
Step 3
Place in a large bowl about 2 cups or so of white vinegar, about ¼ cup balsamic vinegar and about ¼ cup of olive oil, as well as coarse salt, cracked pepper and hot sauce to taste. Whisk these marinade ingredients together.
Step 4
Add your pepper strips to the marinade, and toss them until they are completely coated.
Step 5
Pour your pepper strips and marinade into a plastic zipper bag large enough to hold them and still close well. Squeeze out as much of the excess air as you can, and seal the bag.
Step 6
Let your peppers marinate for two to three hours or overnight, turning the bag to gently remix the contents every so often.
Tips and Warnings
- Adjust all ingredient proportions to suit your individual tastes, because none of the measurements have to be exact. Use marinated peppers to spice up plain sandwiches.
- Never touch your face when working with hot sauce or hot peppers.
