Pumpkin is a versatile ingredient that should not be relegated to certain times of the year. If you are a pumpkin fan, try incorporating it into other baked items, including cookies, muffins and coffee cakes. When you cook with pumpkin, use fresh or canned varieties; avoid pre-seasoned pie fillings because they limit your flavoring options. There are several ways to prepare a pumpkin-flavored yellow cake, including glazed, frosted or topped with whipped cream. Experiment to determine your family's favorite.
Step 1
Preheat your oven to 350 degrees Fahrenheit.

Grease the Bundt pan with 1 tbsp. butter and lightly sprinkle the pan with flour. Shake and discard the excess.

Add the yellow cake mix, eggs, water, pumpkin, nuts and spices to the large bowl. If you are using a spice cake mix, omit the cinnamon, nutmeg and ginger. Whisk or beat the ingredients until they are combined.

Pour the cake batter into the prepared Bundt or other cake pan(s), ensuring that the ingredients are evenly distributed.

Set the pan or pans into the preheated oven.

Bake the cake by following the baking times on the cake mix you are using, or for 45 to 50 minutes. The cake is done when the top springs back when lightly touched or when a toothpick or bamboo skewer inserted into the cake comes out clean.

Tips and Warnings
- You can vary the ratio of spices to your liking. You can use any size cake pan specified on the cake mix package. If you like chocolate, add 1/2 cup chocolate chips to the cake mix ingredients prior to baking. If frosting isn't your thing, once you remove the cake from the oven and allow it to cool completely, slice and serve each piece topped with whipped cream.
