There is no national Canadian chicken dish that would be akin to American apple pie or Italian pasta. But, Canada does have a thriving poultry industry. According to CBC News in Canada, there is some concern that handling and cooking Canadian chicken must be done very carefully, due to certain strains of antibiotic-resistant bacteria that have been found in Canadian poultry. When making Canadian chicken, take rigorous food safety measures and use an instant read thermometer to check for doneness.
Step 1
Preheat your oven to 400 degrees F and coat a baking dish with nonstick cooking spray.
Step 2
Wash your chicken in cool running water, whether you are baking a whole chicken, breasts, thighs, wings or any combination. Pat the chicken dry with paper towels to dry them off and set the chicken in the greased baking dish.
Step 3
Discard the paper towels and wash your hands in hot water and soap for at least 45 seconds.
Step 4
Pour a little bit of olive oil into a small bowl. One-quarter of a cup should be enough, but exact measurements aren't important.
Step 5
Add a package, or a few spoonfuls, of Montreal seasoning to the olive oil for a peppery, garlicky tang. Montreal spice doesn't actually make chicken more Canadian, but it does complement the flavor and add a little interest.
Step 6
Brush the chicken, or chicken pieces, with the olive oil. Coat the chicken well to help brown it and add flavor.
Step 7
Place the chicken in the oven and cook it for at least 30 minutes for chicken pieces and 45 minutes for a whole chicken.
Step 8
Insert an instant-read thermometer into the thickest part of the chicken breast, or the largest piece of chicken. Do not let the sensor probe touch bone, or go through to the baking dish. A whole chicken, chicken thighs and chicken wings are done when they reach 180 degrees F. Chicken breasts are safe to eat when they reach 170 degrees F.

- Baste your chicken occasionally while it cooks to help keep it moist.
- Never let anything that has touched raw chicken come in contact with cooked chicken.
