Warm Wilted Lettuce Salad

Wilted lettuce salad is in interesting study in contrasts. The soft, cool lettuce, hot crisp bacon and tangy-sweet dressing all come together in a veritable explosion of different but complementary textures and flavors. Making wilted lettuce salad is simple and takes very little time. To make your warm bacon dressing slightly more health-conscious, substitute low-sodium bacon for traditional pork or beef bacon. Turkey or soy bacon will not make enough drippings to work well with this recipe.

Step 1

Put the lettuce and chopped green onion into a large bowl and toss them well. Sprinkle a generous amount of cracked pepper and a smaller amount of coarse salt over the lettuce and green onions and toss them again.

Step 2

Place 4 bacon slices into a frying pan and fry them over medium heat until they are crisp and completely cooked through.

Step 3

Put the cooked bacon onto a paper-towel-lined plate to drain.

Step 4

Turn the heat up under the bacon drippings until they start to sizzle. Add the vinegar, lemon juice and sugar and stir with a wooden spoon until all of the sugar is dissolved.

Step 5

Crumble the bacon into the frying pan and stir it into the dressing; then pour the hot dressing over the lettuce and onions, toss well, and serve.

Tips and Warnings

  • Top your wilted lettuce salad with a sliced hard-boiled egg for a little extra protein and some color.
  • Never set cooked bacon on the same plate that held raw bacon.
