Most prawns available from grocers are significantly larger than shrimp. Prawn meat is sweet, juicy and melds well with butter and other mild seasonings. A Chinese butter prawn recipe utilizes a variety of spices to make a powerful sauce that complements the meat. The prawns are fried before adding them to the sauce to crisp their exterior and add texture to the dish. You need approximately 15 minutes to cook Chinese butter prawns.
Step 1
Pour 1 inch of vegetable oil into a skillet or wok and heat over medium for five minutes.
Step 2
Fry the prawns until their exterior turns a light golden brown and then remove them from the oil. Place the prawns onto paper towels to drain.
Step 3
Combine the green onions, minced garlic, minced ginger, butter, soy sauce, pepper, sugar and water in a saucepan. Place the saucepan over medium-low heat and stir its contents until they simmer.
Step 4
Place the fried prawns into the saucepan and stir to coat them in the butter sauce. Remove the saucepan from the heat and serve the butter prawns while they are hot.

- Leftover butter prawns will keep for up to two days in the refrigerator.
