Chicken stir-fry is a quick and easy option for weeknight dinners. Marinating your chicken beforehand adds flavor without adding time to your meal preparation. Stir-fry marinades commonly include soy, sesame and garlic for an Asian flavor. Prep your marinades in the morning to have meals ready for that night, or make them in advance and stash the prepped, marinated chicken in the freezer.

Step 1

Rinse the chicken breasts and pat them dry. Cut into thin slices for easy stir-frying.

Step 2

Measure 1/3 cup each of soy sauce and sweet rice wine or orange juice into a resealable plastic bag.

Step 3

Add between 1 tsp. and 1 tbsp. of dark sesame oil.

Step 4

Peel and mince a 1-inch piece of ginger. Finely chop 2 to 3 cloves of garlic. Add the ginger and garlic to the resealable bag.

Step 5

Seal the bag and shake to combine the stir-fry marinade. Open the bag and add the pieces of chicken breast. Seal and marinate in the refrigerator for at least 15 minutes, or for as long as eight hours.

Tips and Warnings

  • Replace the sweet rice wine with pineapple juice for a tropical stir-fry flavor. If you'd like to use the marinade as a stir-fry sauce, double the recipe and reserve half.
  • Avoid using marinades that have held meat or poultry while cooking.
