How to Cook Wild Turkey Breast With Potato Chips

Wild turkey breast is a tender treat compared to the saline-injected and often hormone-fed mass-produced turkey breasts available. Potato chip baked turkey breast is a singular culinary experience that you should not indulge in too often, but as an occasional meal, it's a juicy, crispy twist on oven baked chicken. Using crushed potato chips as breading is not as greasy or salty as you'd imagine, but you have to use old-fashioned chips. Baked ones won't work.

Step 1

Spray a baking dish with nonstick cooking spray and preheat your oven to 375 degrees Fahrenheit.

Step 2

Melt a half stick of unsalted butter in a shallow dish. Add the lemon juice and pepper and mix well.

Step 3

Place several handfuls of potato chips in a plastic zipper bag. Squeeze out the air and seal it. Fold a clean dish towel in half and lay it over the bagful of potato chips.

Step 4

Roll a rolling pin or bottle back and forth over the dish towel until the potato chips are finely crushed. The dish towel helps keep the potato chips from breaking through the plastic bag.

Step 5

Pour the potato chip crumbs out into the second shallow dish and spread them out.

Step 6

Rinse your wild turkey breast in cool running water and pat it completely dry with paper towels. If it is wet, the butter won't stick to it.

Step 7

Roll the wild turkey breast in the seasoned melted butter and then in the potato chip crumbs. Be sure to coat it completely.

Step 8

Place the coated wild turkey breast in the greased baking dish and place it in the hot oven. Bake it for 30 to 45 minutes or until an instant-read thermometer inserted into the thickest part of the breast reads 165 degrees Fahrenheit.

Tips and Warnings

  • Tent your wild turkey breast with aluminum foil if it seems to be browning too fast.
  • Never eat or serve undercooked wild turkey.
