Pork loin is lower in fat than other cuts of pork. Because it is lower in fat, it is lower in calories, making it suitable for a weight-loss diet. Smoking pork loin adds a new dimension because the wood chips add a flavor to the meat that baking or roasting cannot.
Step 1
Preheat the smoker grill to 230 degrees Fahrenheit.

Trim the fat off the surface of the pork loin to make it even leaner. Place the knife parallel to the cutting board and start cutting the fat along the pork loin. Keep your knife parallel to the cutting board the entire time to avoid cutting too deep. Only trim off what looks like a white skin. Lightly coat the meat with olive oil.
Step 3
Place the pork loin in the smoker. Leave the meat to cook for about an hour, then check the internal temperature with a food thermometer. Allow approximately 30 minutes per 1 lb. of meat. A 4 lb. pork loin should take an hour and a half to two hours to cook.
Step 4
Remove the pork from the smoker when it reaches an internal temperature of 150 F. Allow the meat to rest for about 10 to 15 minutes before cutting it.
Tips and Warnings
- Marinating the meat will help lock in the favor and keep it moist. If you want to add a glaze to the meat, do it in the last five to 10 minutes of cooking.
