How to Bake Chocolate Muffins

For a quick, satisfying breakfast on the go or an after dinner treat, bake up some sweet muffins featuring fruits, nuts, cream or chocolate chips. Chocolate muffins, combining cocoa powder and chocolate chips, pack a double punch for chocolate lovers. Whip up a batch for Sunday brunch and freeze the leftovers to eat later in the week. Turn chocolate muffins into a rich dessert by topping them with chocolate fudge, frosting, fresh fruit or whipped cream.

Step 1

Preheat your oven to 375 degrees Fahrenheit.

Step 2

Put the cupcake liners in the muffin tin and set aside.

Step 3

Melt a 1/2 cup of unsalted butter over low heat. Set aside and cool.

Step 4

Mix the melted butter, eggs, buttermilk and vanilla extract in a large bowl and beat lightly to combine.

Step 5

Mix the flour, cocoa, sugar, baking powder, baking soda and salt in a separate bowl. Add the chocolate chips and stir to combine.

Step 6

Combine the egg mixture with the flour mixture, pouring the liquid slowly into the dry ingredients. Stir gently to mix.

Step 7

Scoop the batter into the lined muffin cups using a large spoon or cookie-dough scoop. Fill the muffin cups 3/4 full.

Step 8

Place the muffins in the middle of the oven on the center rack and bake for 20 minutes.

Step 9

Check if the muffins are done by inserting a toothpick in the center of a muffin. If the toothpick comes out clean, with no batter or crumbs clinging to it, the muffins are cooked all the way through. If the toothpick has raw batter on it, bake the muffins for a few more minutes.

Step 10

Remove the muffin pan from the oven and set it on a wire rack to cool for 5 minutes.

Step 11

Take the muffins out of the pan and set them on the wire rack to cool completely.

Tips and Warnings

  • If you don't have buttermilk, add a tablespoon of apple cider vinegar or lemon juice to whole milk to sour the milk. Let it sit for 5 minutes before using.

  • 1 cup chocolate chips, semi-sweet or milk chocolate
  • 12-cup muffin pan
