Your favorite family recipes do not have to be moved to the back of the recipe box when you use simple substitutions for traditional ingredients. When you are eating a gluten-free, sugar-free diet for health reasons, you may find yourself avoiding many of your past favorite foods. You do not have to avoid deserts such as carrot cake. Substituting almond or rice flour for regular wheat flour will remove the gluten. Using other sweeteners such as agave and stevia will remove the sugar and reduce the spike in blood sugar that results from white sugar.
Step 1
Substitute blanched almond flour or rice flour cup per cup in your carrot cake recipe. Add salt and baking soda if the flour is not self-rising.
Step 2
Replace sugar in your carrot cake recipe with agave nectar or stevia. Use 2/3 cup of agave for every 1 cup of white sugar. Substitute 1 cup of white sugar with 1 tsp. of liquid stevia.
Step 3
Replace cow's milk with coconut milk. Substitute coconut milk cup for cup in your cream cheese frosting recipe.
Step 4
Use sugar substitutes such as agave nectar or stevia in your frosting recipe.
