A fajita is a Tex-Mex dish consisting of meat and vegetables served on a tortilla. There are several variations of fajitas, using different types of meat, vegetables and toppings. A chicken fajita is well complemented by creamy Velveeta cheese. Velveeta is a brand of processed cheese product, altered to have a smoother consistency and richer flavor. You can cook chicken fajitas with Velveeta cheese in a Crock-Pot, and they will be ready in about three hours. This recipe serves six to eight.
Step 1
Combine the chicken pieces, red onion and lime juice in a skillet, and cook them over medium heat until the chicken's juices run clear and the onion is translucent.
Step 2
Transfer the fajita ingredients to your Crock-Pot. Add the minced garlic, ground cumin, seasoning salt, chili powder, green bell pepper, Velveeta cheese and salsa.
Step 3
Stir the contents of your Crock-Pot, cover it, and cook on low for three hours.
Step 4
Remove the lid, and stir yoru fajita ingredients to coat everything in an even layer of Velveeta cheese.
Step 5
Spoon the contents of your Crock-Pot into tortillas, and serve while hot.
Tips and Warnings
- Remove leftover fajita filling from your Crock-Pot, and transfer it to an airtight container. Refrigerate immediately and eat within three days.

- 1/3 cup diced red onion
- 2 tbsp. lime juice
