A soft, white cheese made from the milk of sheep or a combination of sheep and goat milk, feta cheese is considered one of the oldest cheeses in the world. It has been officially recognized as a Greek-only cheese since October 14, 2002 when the European Court of Justice ruled that only cheese from Greece made from milk from sheep or the combination of sheep and goat's milk could be labeled as feta. Feta cheese and shrimp are featured in many Greek recipes, and baked feta shrimp is a popular dish served in many Greek taverns. Youvetsi is the earthenware dish usually used for serving this recipe.

Step 1

Toss the fresh shrimp in lemon juice and set aside.

Step 2

Heat the olive oil in a skillet over medium heat and cook the onion or shallots and scallions until they are semi-transparent or for about eight minutes, stirring occasionally.

Step 3

Add the tomatoes, dry white wine, garlic and parsley to the pan, and season with salt and pepper. Stir and mix the ingredients well.

Step 4

Lower the heat and allow the mixture to simmer, stirring the ingredients occasionally for 30 minutes until dense.

Step 5

Spoon some of the sauce into a large baking dish and arrange the shrimp evenly over it before adding the rest of the sauce on top of the shrimp.

Step 6

Top the sauce with the crumbled feta cheese, submerging the chunks in the sauce.

Step 7

Bake the shrimp for about 20 minutes in a 450-degree Fahrenheit preheated oven; the shrimp will be fully cooked and the cheese melted.

Step 8

Garnish the dish with fresh parsley leaves before serving.

Transfer the shrimp and sauce into a baking dish and sprinkle the crumbled feta cheese on top.
